SALINAS, CA (April 28, 2016)–Natividad Medical Center offers a Certified Farmers’ Market every Wednesday from 11:00 a.m. – 3:30 p.m. The Farmers’ Market is located at 1441 Constitution Blvd., outside of building 200-Out Patient Services and is part of Natividad Medical Center’s ongoing commitment to promote wellness and healthy eating among Natividad Medical Center’s staff, patients and their families.
At Natividad Medical Center’s Certified Farmers’ Market run by Everyone’s Harvest, shoppers will find fresh quality fruits and vegetables (many certified organic), beautiful flowers, live plants, and unique gifts from small-scale family farmers and local independent businesses. Seasonal Vegan Sushi
Serves 6
Chef Kari Bernardi- Super Natural Chef
For the Sushi Rolls:
· 6 Nori Seasweed Sheets
· 6 Cups of Sprouts or Micro-Greens
· 1 bunch of swiss chard, sliced thinly cut into ribbons
· 2 Avocados, peeled, seeded, and thinly sliced lengthwise
· 1 Red bell pepper, seeded and julienned
· 1/2 cucumber, seeded and julienned
· 1 Carrot, peeled into ribbons/curls
For the dipping sauce, to be combined:
· 6 tablespoons tamari
· 2 tablespoons wasabi powder, mixed with water
· enough water to mix with wasabi powder (just enough to form a thick paste)
To assemble:
Lay one sheet of Nori seaweed on a bamboo sushi mat with the Nori sheet’s shiny side down. At the end of the Nori sheet closest to you, layer some sprouts or micro-greens, chard, avocado, bell pepper, cucumber and carrot. Begin rolling Sushi by gripping the edge of the Nori sheet and the sushi mat with your thumb and forefingers, and pressing the filling back with your other fingers. Using the sushi mat to help you, roll the front end of the Nori sheet over the filling. Gently squeeze together with your sushi mat, then lift the forward edge of the mat and continue rolling. Seal the end of the Nori roll with water, slice the roll into 6-8 pieces using a sharp knife. Repeat the steps with the rest of the ingredients and arrange rolls on personal plates.
Chef Bio:
Kari Bernardi, aka Super Natural Chef, is a certified Gourmet Raw Food Chef and Instructor. Kari is the owner and executive chef of a raw vegan gluten free product line called Super Natural Foods Company in Carmel California. She is the founding Director of Monterey County’s Farm to School Partnership Program and a former faculty member at Living Light Culinary Arts Institute. Kari continues to be instrumental in supporting policies promoting healthy school food, bringing fresh fruits and vegetables into schools and teaching farm fresh nutrition education to students around the world. For over 20 years Kari has shared her teaching expertise to help people thrive on a plant-based diet and has taught students from 3 years old to 95 years young.
